The 7 Tiered Classic Wedding Cake

Tiered wedding cakes traditionally represent prosperity. This classic style is perfect for the classic bride. Originating in England, this early 20th century cake style emerged from the kitchen of Joseph Lambeth, a master baker. Fine garlands and lattice work are piped over the fondant in dramatic patterns. The heavier elements are piped using buttercream.

Today, there are no rules or limits to the number of layers and designs that can be incorporated. This cake is a great example of the use of fondant. Hundreds of meringue flowers cover the exterior, giving it a striking resemblance to a heavily embroidered bodice. The beauty in fondant is its flexibility; the flowers on this cake could be any color or any shape.

A curvy strand of piped meringue flowers sashays down rectangular tiers for the Ribbon Rose cake; each tier comprising a pearly border. Each rose is piped with a continuous squeeze onto a flower nail and baked before being affixed to the cake with royal icing.
